GEBRANNTE MANDELN is a 200-year-old German recipe. The English translation is “burnt almonds,” also known as cinnamon-roasted almonds.

Nuts are not fatty junk foods, but instead have nutrients that help protect against heart disease, cancer, diabetes, and maybe even Parkinson’s disease. They are packed with antioxidants, and are high in fiber and protein, thus they are a healthy addition to the diet. Just one ounce of pecans equals the antioxidants of one cup of strawberries.

Cinnamon added to foods helps suppress blood sugar by boosting insulin activity. It helps cells’ ability to process the glucose.

Water is used in the roasting process instead of oils, so you will find the nuts will last for many months and not become rancid or oily.

RECIPES FROM ALMONDI:

Mandelkuchen (Almond Cake)

4 oz. (1/4 lb.) Bavarian Almonds, crushed
4 eggs
1- ½ cups sugar (divided)
2 tsp. vanilla (divided)
2 cups flour
8 oz. whipping cream
2- ½ tsp. baking powder
1 stick (1/4 lb.) butter
4 tbsp. milk

Heat oven to 375 degrees.

Beat eggs with 1 cup sugar, & 1 tsp. vanilla. Add whipping cream, flour & baking powder. Stir thoroughly and spread in a greased 9 x 13 inch pan. Bake for 15 minutes, or until top is golden brown.

Melt butter. Add ½ cup of sugar, 1 tsp vanilla, milk and crushed Bavarian almonds and stir to mix. Spread on top of cake and bake for another 10 minutes.

Coffee Cake

¾ cup sugar
1 egg
1- ½ cups flour
½ tsp. salt
¼ cup soft shortening
½ cup milk
2 tsp. baking powder

Streusel: Mix ½ cup Almondi Mix, 2 tbsp. flour and 2 tbsp. melted butter.

Heat oven to 375 degrees.

Grease and flour a square 9 x 9 inch pan. Mix sugar, shortening and egg. Stir in milk. Blend in dry ingredients. Spread ½ half of batter in pan. Add ½ of streusel mix, remaining batter. Sprinkle remainder of streusel mix over top. Bake 25 to 30 minutes. Serve warm.
